Half a Mutton or Hogget, cut the way you like it by our friends at the BMV butchery just down the road.
All of our mutton is produced to rennaisance standards this means that:
It has been dry hung on the bone for 14 days.
It has been on a diet of mostly grass (ours are all pasture for life accredited!).
It meets a commercial carcass grade to ensure the mutton you receive is not overly fat or lean.
It must be at least 2 years old (our mutton sheep are all specifically bred for mutton and are all 2-3 year old wethers.)
Our Hogget meets all of the same requirements except it is 12-24 months old.
Please be aware that Mutton and Hogget is killed to order so there is a wait of about 16 days.
